Why shouldn’t owners of restaurants be responsible for paying their workers?

Contrary to the historical narrative promoted by the restaurant bosses and their representatives, the tipping system has been synonymous with the restaurant industry since the invention of restaurants in Paris in the 18th and 19th centuries. It is clear that the tipping system is NOT a historical accident, inherited from earlier periods in history but an essentially modern form of the wage that leaves workers powerless. This has been understood by the many generations of restaurant workers who have fought alongside the rest of the working class, and who have fought to replace the tipping system with a high, stable, and hourly wage.

Al contrario a la narrativa histórica propagada por los patrones de restaurantes y sus representantes, el sistema de propina siempre ha sido sinónimo con la industria de restaurantes desde su invención en París en los siglos 18 y 19. Es claro que el sistema de propina NO ES un accidente histórico, heredado de previos períodos históricos, sino una forma esencialmente moderna del salario, que deja a los trabajadores sin poder. Esto ha sido entendido por muchas generaciones de trabajadores de restaurante que han luchado hombro-a-hombro con el resto de la clase obrera, y que han luchado para reemplazar al sistema de propina con un salario por hora alto y estable.
